A Holiday Note

PUMPKIN PIE
Prepare Two 9" pie crust
1 1/2 Cup of Sugar
29 oz Libby's Solid Pumpkin
1 tsp. salt
Two12 oz cans evaporated milk
2 tbl. Cinnamon
4 eggs
1 1/2 tbl. Pumpkin pie spice
In large mixing bowl combine all ingredients (add evaporated milk last)
Pour into pie crusts. Sprinkle cinnamon on top. Bake at 425 degrees for 15 minutes reduce temperature to 350 degrees and bake an additional 40-50 minutes.
When finished a knife inserted in the center of pie should come out clean.
Cool, garnish with whipped cream and serve. _____________________________________________________________________________
